I haven’t owned a 360 for over 40 years but it sounds like your reed valves which is normal. Good looking bike well done Enjoy it

All i can hear is piston rattle with the headphones on. But if the mains are a bit rough from being parked & moisture causing light rust in the bearings it could improve so you can't hear it. Happened to my AT1 & still ok two years later. But piston rattle is loud [& exhaust is loud & can hear it clearly over that]. Bike looks nice though & love the color [colour in nz lol].

Quite loud piston slap, I think it will need to be bored oversize. Exhaust sound is great, smoke not excessive, and sounds like the carb is well tuned based on the idle and low rpm in the video. That is a very nice RT2.
