Power is good on both ends of jumpered connect show 12.27 volts. I probed the yellow/white at handlebar switch, it has power, I then checked the yellow/white at the connection that's stuffed into the coil area (see picture), that too has power.

Okay. With yellow/white going to handlebar switch having power, then with handlebar headlight switch on you should have power to the Yellow coming out of headlight switch (beam select on high beam) or Green (beam select on low beam) Both those connect to headlight.

Mark thank you!!! After checking the yellow and green wires coming out of handlebar switch, no power, I remembered I had bought a cheap ebay switch years ago when I was much poorer, I connected it up and well hell - I now have full lights... Thank you for taking your time and patience to walk this electrical moron step by step. I am now a very large step closer to getting this registered for the road and enjoying it...

Well done and, as you say, big thanks to Mark.
If you ever get a free moment, carefully take the old switch apart (whilst taking photos as you go!) and see if you can identify and fix whatever was wrong with it - might just be dirty contacts, or maybe a solder has broken.

Thanks Alan, was a great relief that I finally found the issue but not after spending over $200 for new parts I didn't need. Oh well, I have them if I need them and if I can ever get the 360 I want I have most of the expensive parts I need to convert that to 12 volt if I want.
As for the switch, I did have it apart a few years ago when I first got the bike as the turn signals and horn didn't work. I think I'm going to send it off to Deet sometime in the future to get it restored but at least I have this cheap ebay switch (which looks pretty good), to use in the meantime.
This is a big weight off my shoulders as I'm no good with electrical issues, now I can FINALLY get this bike on the road. Had it since 2018 and it's been one thing after another with it plus just retiring at the time money was an issue (not that it's no problem now mind you), so I'm feeling pretty good about it.

You fixed it, not me... you're absolutely NOT an "electrical moron" in my book! You did a fine job tracing out the circuits and then figuring out the switch was bad.

I wouldn't worry too much about this, as you'll likely get most of the money back if you decide to sell them on.

Well guys, fixed one issue and now another bigger issue raised it's ugly head.
Took the bike for a few rips down the street, felt for a couple laps then it started making noise like piston slap so I headed for the house then I felt it start to seize so I pulled in the clutch and coasted most of the way home.
Pulled the top end off and found the big end bearing is toast. Must of happened when I had the runaway throttle and my ripping up and down the street did it in. Now to find someone who can go through it for me and hopefully the rod isn't ruined...
