Bolt-on peg mounts and rubber-covered footrests are what are listed as stock for the 71 DT1MX. Fortunately, they are still available OEM. The mounting bar is not available, but all of the other stuff seems to be. Source is Partzilla.

You will find a lot of the parts are still actually available from the dealer network.

I'll be sourcing every OEM part I can including nuts, bolts, and washers. I will be keeping with original paint where I can with minumal touch up. My goal is to restore the bike as pure as I can.

The 1971 DT1E and DT1-MX Owner's Manual is in the Tech Library and might be helpful. 
(Note there wasn't a year where the bike was called the DT1F...  the DT2 and DT3 have the same DT1F prefix in the serial number but have several completely different parts that are not compatible with your DT1E based MX.)
The back of the owner's manual has a nice section on the MX that will probably be helpful in your restoration.

Oh, and don't expect new nuts and bolts from Yamaha today to be "correct"...  they should fit but many look a lot different than they did when the bike was new.

Motodad24 on ebay sells several bolt kits that contain original-type bolts, nuts, washers, and grommets.  Or hopefully you can re-use or refinish the originals you have.

Let me add to Mark's comment, the nuts and bolts will absolutley not be correct.  

Motodad24 on eBay for many fasteners and grommets.

BoltDepot.com for packages of bolts similar to the originals.  nuts are not as critical, but Boltdepot carries those as well.

I have a 70 and 71 DT1MX, the rubber footpegs and removable bar are definitely correct, but I have serrated on the one I ride.
